When I am being a good boy, I make a salad and take it to work.

I like to add 2 eggs daily - for protein.

I routinely buy 12 eggs at a time.

So, for maximum eggy freshness, should I :

1) Boil all 12 on home arrival, refrigerate all 12, and peel 2 daily

or

2) Boil 2 daily and leave the others raw and virginal in the fridge

This is a real dilemma as I want maximum freshness and minimum Edwina-salmonella.

Please take this seriously - I have 12 of the little darlings in the fridge and need some top quality SE1 advice.

I'd say cook them first (on the basis that I think a cooked egg will be more resistant to decay than an uncooked one).

12 a week? My doctor would have a heart attack over that. Perhaps more important than 'freshness', we are advised not to take in too much cholesterol - my rudimentary understanding is that the 'good' HDL variety is contained in egg yolk but may have the effect of raising the LDL or 'bad' cholesterol - the eggsact effect depends on an individuals genetic make-up, and your normal diet. In any event, the general advice seems to be not to eat more than the equivalent of 5 eggs per week.

Ah, but did you get yesterday's news story saying that eggs are now officially OK in eggstraordinary quantities? This expert medical advice changes all the time, you know ;0)

(Once upon a time they thought that cider was bad for you! Can you believe that?!?!??!!)

Eggsactly - the theories change regularly - red wine is bad, then it's good, too much red meat is bad / good etc. Seems the cumulative effect of any food intake is often down to an individuals body-type, dna etc., and there will always be eggceptions to 'the rules'...

Nope - your doctor is out of date.

The recommended amount is now 2 per day - 14 per week. I love eggs - and usually have 2 a day every working day.
